A true master of his craft and a creator at heart — Metropolis Syrovarnya’s head chef, Ivan Kamnev.
His work is built on a systematic approach to cuisine: from selecting the product to the final presentation.
Ivan shapes his signature style through continuous exploration of gastronomic trends and a thoughtful attitude toward ingredients. At the core of his cuisine lies the product itself with its natural qualities, which he strives to reveal as honestly and technologically as possible. He personally oversees the sourcing of ingredients, tests new items, and structures processes so that every dish maintains consistent flavor and quality.
In the Syrovarnya menu, Ivan focuses on combinations that embody the restaurant’s character: dishes that look simple gain depth through precise work with textures, maturation, and balance of flavors. His culinary decisions always revolve around the product, without unnecessary complication, yet with clear logic and a personal interpretation of the classics.
Ivan’s favorite dishes at Syrovarnya are the bruschetta with cured ham and borsch, which he considers an example of cuisine that is familiar, yet highly technological.
