Alexander Smirnov

With over 20 years of experience, Alexander has grown from a line cook to an accomplished head chef. Since 2005, he has led kitchens in Moscow, Novosibirsk, and the Kuzbass region, opening several successful local projects, including the renowned Aviator restaurant. He has also taught a course in modern gastronomy at the College of Food Industry and Hospitality.

Alexander trained with such remarkable chefs as Bruno Paterlini, Mirko Dzago, and Adrian Quetglas. His culinary philosophy centers on simple, honest food made from high-quality ingredients. He believes in seasonal and locally sourced produce and always strives for a perfect balance of flavors so that every guest can fully enjoy their favorite dishes.

For Alexander, the kitchen is a way of life. Traveling, exploring foreign markets and villages, discovering local ingredients, and learning from international chefs are all sources of inspiration. His love for food is evident in every detail.
