Shakh Tsotsoria
Shakh began his culinary career in 2013 after graduating from Culinary College No. 3. Like many chefs, he started as a line cook, but within a year became sous-chef at the Italian restaurant IL Forno, located across from the Cathedral of Christ the Savior. In 2017, he took charge of the kitchen at IL Forno on Neglinnaya Street, and from 2022 to 2025 he led the flagship IL Forno on Kutuzovsky Prospekt.
His passion for cooking was born in childhood: his grandfather was head chef at the legendary Gagripsh restaurant in Gagra, while his mother’s home cooking filled the house with irresistible aromas. These memories laid the foundation for his future career.
Today, as head chef of Syrovarnya at COLUMBUS Mall, Shakh believes that cooking is not only about skill but also about genuine care for the guest. In every dish, he seeks to capture the warmth of family cooking and show how simple, natural ingredients can be transformed into big, memorable flavors.
